Origin
Satsuma cattle from Mizusako Farm are raised at one of Japan’s largest family-owned Wagyu farms. Located in Ibusuki, Kagoshima, at the southernmost tip of Kyushu where is a region celebrated for its Wagyu heritage. The farm benefits from an exceptionally rich natural environment and mineral-rich spring water, providing optimal conditions for cattle growth.
Through years of research into feed composition, Mizusako Farm has perfected the production of red Wagyu beef with enhanced aroma, natural sweetness, and rich umami, reflecting decades of expertise in creating premium Wagyu.
Classification
The A5 Rib Cap of Satsuma Wagyu is the premium outer rim of the striploin, located on the opposite side of the fat strip that runs through each ribeye. When fully separated from the ribloin and cooked as an independent cut, the rib cap becomes an extraordinary, self-contained piece of meat, prized for its flavor and tenderness.
