The Tenderloin, located on the inner side of the loin, contains virtually no muscle. It is distinguished by its fine texture, exceptional tenderness, and low-fat content, delivering a delicately balanced and refined flavor profile.

Origin
- Satsuma cattle from Mizusako Farm are raised at one of Japan’s largest family-owned Wagyu farms. Located in Ibusuki, Kagoshima, at the southernmost tip of Kyushu where is a region celebrated for its Wagyu heritage. The farm benefits from an exceptionally rich natural environment and mineral-rich spring water, providing optimal conditions for cattle growth.
- Through years of research into feed composition, Mizusako Farm has perfected the production of red Wagyu beef with enhanced aroma, natural sweetness, and rich umami, reflecting decades of expertise in creating premium Wagyu.
Classification
The Tenderloin of Satsuma Wagyu A5 is located on the inner side of the loin and contains almost no muscle. With its silky texture, supreme tenderness, and minimal fat, this is the most luxurious and valuable cut, representing only about 2% of the entire carcass.
