Origin
Satsuma cattle from Mizusako Farm are raised at one of Japan’s largest family-owned Wagyu farms. Located in Ibusuki, Kagoshima, at the southernmost tip of Kyushu where is a region celebrated for its Wagyu heritage. The farm benefits from an exceptionally rich natural environment and mineral-rich spring water, providing optimal conditions for cattle growth.
Through years of research into feed composition, Mizusako Farm has perfected the production of red Wagyu beef with enhanced aroma, natural sweetness, and rich umami, reflecting decades of expertise in creating premium Wagyu.
Classification
The Satsuma Wagyu A4 Tenderloin is located on the inner side of the loin. As a non-weight-bearing muscle, this cut is characterized by its exceptionally fine grain, unrivaled tenderness, and lower fat content. It is the most premium and coveted cut, accounting for only about 2% of the total carcass weight.
